Yummy Mini Pizzas

I love pizza but since I am not eating out (life improvement resolution) as much, I had to have a replacement.  Thanks to the “Belly Fat Cure” diet I can get my pizza fix.

What you need:

4 whole wheat pita rounds

1 jar of pizza sauce ( I love Mids)

1 cup shredded mozzarella cheese

1/4 lb of sliced pepperoni ( this leaves extra for a snack later or another round of pizzas later in the week)

What you do:

Pre-heat oven to 425 degrees

Place pita rounds on a sheet pan and toast in oven for 5 min. 

Once out of the oven top with 2 tbsp of the pizza sauce, 1/4 cup of the cheese and pepperoni to taste.

Put back into the oven for 7-10 minutes or until the cheese is melted and slightly browned.

Makes 4 servings (or if your husband is like mine, 3 servings)

The beauty of this recipe is that you can change it up any way you want.  Add veggies or other meat.  I love using goat cheese, tomatoes and spinach with an olive oil/garlic sauce.  So tasty!
