Slow Cooker Chicken Taco Soup


Well it is still cold here (stupid ground-hog!) and I am always looking for things to warm the belly and the soul.  I hit the nail on the head with this version of an chicken taco soup.  Throw this in the slow cooker and your evening meal will be bubbling before you know it.  My hubby (the best food taster I know)  at two bowls of the stuff before I even got home from the gym!  If you would like to try chicken taco soup…

Here’s what you need:

3 boneless, skinless chicken breasts

1 can black beans

1 can whole kernel corn, drained

1 can chili beans ( we used spicy and it added a nice little kick)

2- 10 oz cans of tomatoes with green chilies

1- 8 oz can of tomato sauce

1- 12 oz bottle of beer (we used and Sierra Nevada Ruthless Rye but Dos Equis would work as well)

1 small onion, diced

1 packet of taco seasoning


Here’s what you do:

Dump everything in your slow cooker, stir.  Add in the chicken.  Cook on low for 8-9 hours or high for 4-5 hours.  Once cooked, remove the chicken and shred.  Return the shredded chicken to the soup and stir.  Serve with sour cream, cheese and tortilla chips!  I hope you enjoy this easy meal.  It is a new family fav around here!
