Here’s what you need…
3 bags of fresh baby spinach
1 lb of spicy Italian chicken sausage, sliced into rounds
2 cloves of garlic, minced
the juice and zest of one lemon
1 tbsp olive oil
1/4 cup of low sodium chicken stock
1/4 tsp salt/pepper
Here’s what you do…
Heat the garlic and olive oil over medium high heat. Cook the sausage until browned. Add the spinach, lemon juice and zest, chicken stock and salt and pepper and stir. Cover and allow to wilt for 5 minutes, stirring half way through.
I served my saute over mashed potatoes and it was delicious! I will definitely be making this again! Hope you enjoy.
