I love, love, love pad thai! It is my go to dish whenever I go to a thai restaurant. When I found this recipe on pinterest I was so excited! I could not wait to make this meal. Here’s what you need…
1 lb of skinless, boneless chicken breast, cut into bite-sized pieces
1- 12oz package of rice noodles
1/4 cup + 2 tablespoons of oil (I used grapeseed oil)
2 cloves of garlic, minced
3 green onions, chopped
2 tablespoons white wine vinegar
4 tablespoons fish sauce
5-6 tablespoons of white sugar (used around 5)
1 tablespoon of sweet chili sauce
1 1/2 teaspoons crushed red pepper flakes
1/8 teaspoon cayenne pepper
2 cups of bean sprouts
1/4 cup of crushed peanuts
1 green onion chopped for garnish
1 lime, cut into wedges
Here’s what you do…
Soak rice noodles in hot water for 30 to 45 minutes, or until soft. Drain, and set aside.
Heat oil in a wok or large heavy skillet over medium-heat heat. Saute chicken, garlic and green onions until browned. Remove and set aside.
Return the wok to the burner and add 1/4 cup of oil. Heat oil in wok over medium-high heat. Crack eggs into hot oil, and cook until firm. Stir in chicken, softened noodles, vinegar, fish sauce, sugar, sweet chili sauce, red pepper, and cayenne pepper. Adjust seasonings to taste. Mix while cooking, until the noodles are tender. Squeeze a wedge of lime over the noodles and toss.
Serve with bean sprouts, chopped green onion, chopped peanuts and a wedge of lime.
