The weather here has been magical! It is warm into the evening and make for the perfect opportunity to bust out the grill. My favorite thing to grill is chicken. We use a simple spice mix from Weber called “Kickin Chickin”. If you can find it, get it! It has great flavor and adds a little “kick” with cayenne. We keep our chicken simple when we cook it but dress it up later. Tonight I added caramelized onions to the top and so man was it good. I paired that with a warm broccoli salad. Very yummy, no mayo. I am going low carb right now to get ready for the beach at the end of June. Not going to be perfect but just hope to be a little smaller and not so uncomfortable in a bathing suit! You can add a potato or other starch to round out your meal if you want. If you would like to make my grilled chicken with caramelized onions and warm broccoli salad….
Here’s what you need…
4 chicken breasts, seasoned and grilled
a small yellow onion, thinly sliced or chopped
broccoli, 1-2 heads fresh or 1 bag frozen
3 garlic cloves (mine were small so I used three, just adjust based on size and flavor preference)
1/4 cup of pine nut, roasted
zest and juice of 1 lemon (adjust depending on how lemony you like it or how juicy your lemon is)
1/4 cup of grated parmesan cheese
1/4 cup of raisins if desired, I did not have any on hand but would add a nice sweetness
Here’s what you do…
Grill the chicken with your choice of seasonings. On the stove, heat 2 tablespoons of olive oil in a small pan over medium-high heat. Add in onions, salt and pepper. Cook until softened and slightly browned (about 8-10 minutes), add a splash of balsamic vinegar right at the end.
For the broccoli salad: Steam your broccoli until crisp tender. Heat 2 tablespoons of olive oil in a large pan. Toss in the garlic and cook for 1 minute. Add in the broccoli and pine nuts( I am sure you could use sunflower seeds too) and stir. Add the cheese, raisins and lemon zest last and cook to heat and slightly melt the cheese. Take off the heat and squeeze in the juice. Toss to combine and serve immediately.
This is one of my favorite ways to eat broccoli :)! My “never eats green stuff” husband even loved it! Hope you enjoy!
