Memorial Day Memories

I love Memorial Day!  Friends and family all getting together, picnicking, laughing and just enjoying each other.

It is a day to relax, eat amazing food and as it happened this year, have a water fight!  Jaxen my nephew got in on the games and was soaked head to toe!

Avery sat out of the water fight but loved the swimming pool and “seal” sprinkler.

But let’s be honest, why do we come to a picnic, for the food!  The spread was amazing!  We called it the pinterest table!  My whole family is hooked :)!  My contribution was my own.  Salsa and guacamole!

I was really feeling the Mexican flavors.  I used fresh tomatoes and avocados and boy both dishes were amazing!  My sister made a cucumber and zucchini dish that I am totally sharing.  It was so light and refreshing and will need to be made for future picnics and gatherings!  If you would like to make my fresh salsa and guacamole…

Here’s what you need…

For the guacamole:

4 ripe avocados

1/2 a small red onion, minces

juice of 1 and 1/2 limes

1/2 tsp cumin

1/2 tsp cayenne

1/2 tsp salt

1 clove of garlic, minced

For the salsa:

4 ripe tomatoes, chopped

1/2 small red onion, chopped

1 jalapeño, minced

3 cloves of garlic, minced

Juice of 2 limes (this makes it nice and bright but you can cut it back to one if you don’t care for so much citrus)

1/4 cup of olive oil

salt to taste

 

Here’s what you do…

For the guacamole:  Cut the avocados in half lengthwise.  Remove the seed and scoop out the flesh into a bowl.  Add the lime juice and mash until creamy or with leaving a little chunk.  The lime juice will help keep the avocado from browning.  Add in the onion, garlic, cumin, cayenne and salt.  Adjust seasonings as needed.  refrigerate until ready to serve.

For the salsa:  Chop the tomatoes and place in a bowel.  Add the chopped onion, garlic, and jalapeño.  Add lime juice, olive oil and salt.  Adjust seasonings to taste.  You can either blend to a smoother texture or leave it more like a salsa fresco.  We added a dash of hot sauce for a little extra kick!

The cucumber and zucchini carpaccio is also pretty easy to make.  It is awesome for any picnic or family gather you might have.  I can’t take credit for this.  My sister found this on pinterest and made it for the party.  It was so good I had to add it to my post.  If you would like to make this cucumber and zucchini carpaccio…

Here’s what you need…

1/4 cup of extra virgin olive oil

4 tablespoons of fresh lemon juice

1 tablespoon finely chopped fresh mint

2 tsp of finely chopped fresh dill

1 tablespoon finely chopped Italian parsley

2 zucchini, sliced paper-thin

2 cucumbers, sliced paper-thin

1/2 tsp of salt

1/4 cup of feta cheese, crumbled

1/4 cup of roasted walnuts, chopped

freshly cracked black pepper

Here’s what you do…

In a glass bowl, whisk together the olive oil, lemon juice, dill, parsley and mint.  Taste and adjust as needed.  Set aside.

Thinly slice the cucumbers and zucchini on a mandolin .  Arrange them on a large platter, alternating between zucchini and cucumber.  Sprinkle with salt.  Drizzle 3 tablespoons of the dressing, or as much as you want.  Top with the feta cheese and walnuts.  Finish with the cracked black pepper.  Serve immediately.
