Everybody loves a baby shower! And I am no exception. This baby shower happened to be for my sister-in-law, Angie, who is having a baby girl in August. She has decided to decorate the babies room in purple and gray. We went with similar colors for the shower.
We thought long and hard about the food to serve. Chicken salad served on slices of avocado (another Pinterest find!), homemade humus and tabbouleh, fruit and veggies trays all made for a beautiful setting.
The real star of the show was the cake my Aunt Judy had made for the occasion. Sweet Pea! Judy is truly gifted with cake and fondant. She has agreed to do Avery’s 1st birthday cake :).
If you would like to make the chicken salad from the party…
Here’s what you need…
1 cup of chicken; cooked and shredded
1/4 cup of corn
1/4 cup of black beans, rinsed and drained
1/4 cup of green onions, chopped
1/4 cup of tomatoes, diced
1/4 cup of cilantro, chopped
1/4 cup corn chips, crushed
2 tablespoons white vinegar
4 tablespoons mayo
2-4 avocados, sliced in half with pits discarded
Here’s what you do…
In a medium bowl, toss the chicken, corn, black beans, onions, tomatoes, cilantro, and corn chips together. Add the vinegar and mayo to the mixture and toss to coat. Salt to taste. Spoon salad into halved avocados. Serve immediately with a spoon and fork!
This is seriously one of the best chicken salads that I have ever tasted! Served on the avocado was just delightful! This would be perfect for any picnic or family gathering this summer!
