Pumpkin Spice Bundt Cake with Pumpkin Glaze

I LOVE FALL!  I love everything about fall.  Apples, pumpkins, colorful leaves, and cooler weather perfect for sweaters and jeans.  There is just something about fall that makes me want to bake yummy goodies filled with pumpkin, cinnamon and nutmeg.  This is a recipe I found in a really fun magazine called Yum for Kids.  Highly recommend this magazine for mothers.  Great ideas and good recipes.  This cake tastes like fall.  It is spicy and warm with the wonderful pumpkin flavor I crave this time of year.  This would be perfect for a fall party or get-together.  If you would like to make this cake…

Here’s what you need…

For the cake:

2 cups granulated sugar

1 cup butter, softened

4 large eggs

1 cup canned or pureed pumpkin

1 cup sour cream

2 tsp of vanilla

3 cups of all purpose flour

1 tbsp ground cinnamon

2 tsp baking soda

1 tsp of salt

For the glaze:

1 cup of confectioners’ sugar

2 tbsp of milk (you may need to add more if the consistency is not right)

1/2 tsp of vanilla

2 tbsp of pureed pumpkin

1/4 tsp of cinnamon


Here’s what you do…

For the cake:

Preheat the oven to 350 degrees.  Grease and flour a 12 cup bundt pan.

Add sugar and butter to a large mixing bowl.  Beat on low until light and fluffy.

Slowly add the eggs, one at a time and continue mixing until well incorporated.  Add in the pumpkin, sour cream and vanilla, mixing on slow speed.

With mixer on slow, add flour, one cup at a time.  Next add in the cinnamon, baking soda and salt.  Blend until well incorporated.

Pour the cake batter into the prepared pan and bake for 60 minutes or until a knife inserted into the center comes out clean.  Remove from the pan.

For the glaze:

Place the confectioners’ in a medium bowl.  Slowly whisk milk into the sugar until all lumps disappear.  Continue whisking while adding in the pumpkin, cinnamon, and vanilla.

Once the glaze is smooth, pour over the warm cake, allowing it to drizzle over the sides.

I served this warm and it was AMAZING!
