Chocolate Chip Zucchini Muffins

I love zucchini!  It is so easy to use and cook.  Our local farm had an amazing selection.  I spent most of the summer eating zucchini.  I decided to use it in my baking too.  I started to search for healthy zucchini bread recipes and found this one on MyRecipes.  I add the chocolate chips for fun 🙂  I love this recipe with its lower amount of sugar and use of whole wheat flour.  I felt healthy eating it!

If you would like to make these delicious muffins…

Here’s what you need…

1 cup of whole wheat flour

2/3 cup of all-purpose flour

1/2 cup of sugar

1 tsp of cinnamon

1 1/4 tsp of baking powder

1/2 tsp of baking soda

1/4 tsp of salt

1 1/3 cup shredded zucchini

1/2 cup of fat-free milk

2 tbsp of canola or vegetable oil

2 tbsp of honey

1 large egg

cooking spray

1 tbsp of sugar and 1/4 tsp of cinnamon (for topping)

Here’s what you do…

Preheat oven to 400 degrees.  Combine flours, sugar, cinnamon, baking powder, baking soda, and salt together.  In a small bowl, mix zucchini, milk, oil, honey and egg.  Stir until well combined.  Make a well in the flour mixture and pour in the milk mixture.  Stir just until moist.  Fold in chocolate chips.  Spoon batter into muffin papers.  Sprinkle the tops of each muffin with the cinnamon sugar mixture.  Bake for 15 minutes for regular or 8 minutes for mini or until the golden.  Allow to cool on a wire rack.  Makes 12 muffins or 24 mini muffins.
