Top of the Muffin to Ya!


I love to bake. There I said it. I, Rachel, love to bake. I especially love the fruits of my labor :). I will take any excuse to bust out my muffin pans and Easter Sunday was the perfect excuse. My mom and I put together a play to represent the resurrection to our elementary school kids. We were able to get a couple of other adults to help us out. My dad and my husband were both a part of our “production”. My husband agreed only if my mom would make him chocolate chip cookies. And so she did!


Anyway, back to the baking. Since we needed everyone there early to go through the play and make sure all was set and ready, we decided to feed our dear actors. Mom made a coffee cake and I went about using some fresh blueberries I had in the fridge. The ending result were the best blueberry muffins I have ever made.


This recipe is simple and delicious! The original recipe comes from here. I added extra blueberries and it actually stretched the batter. This is the PERFECT muffin! I will use the base for so many different kinds of fruit muffins! If you would like make these muffins (and I think you should 🙂 )…

Here’s what you need:

For Muffins:

1 cup fresh blueberries (I did more like 1 1/2 cups)

1 1/2 cups of flour

3/4 cup of sugar

1/2 tsp of salt

2 tsp of baking powder

1/3 cup of vegetable oil

1 egg

1/3 cup of milk

For crumb topping (this makes a LOT):

1/2 cup of sugar

1/3 cup of flour

1/4 cup of butter; cubed

1 1/2 tsp of cinnamon

Here’s what you do:

  1. Preheat oven to 400 degrees F. Grease muffin cups or line with muffin liners. I recommend the liners.
  2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  3. To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  4. Bake for 20 to 25 minutes in the preheated oven, or until done.

Now if you fill up to the top it only makes about 6-8 muffins. They will be HUGE and delicious. Kind of like the ones at coffee shops. Or you can go with about 3/4 full and get 12 average sized muffins. I am telling you this is the best recipe I have found and they were a huge hit!
